sometimes I see cubed pork or cubed chicken in the store. It looks a little like ground meat, but more intact. What is cubed and what is its purpose? Tenderization maybe? I have no idea LOL

Cubed meat (or Cube Steak) is chunks of very lean beef/chicken/pork that has been run through a tenderizing machine several times. It makes GREAT chicken fried steak!

cubed as in cubed steak?
i think that is what you are asking!
A flavorful cut of beef taken from the top or bottom round and tenderized (or cubed) by running it through a butcher's tenderizing machine once or twice. Cube steak would be too tough to eat without being tenderized.
it looks like has dents everywhere.

cubed steak is:
tenderized slice of beef: a thin slice of beef that has been scored with squares to make it more tender

and cubing the meat is just a way of preparing it

If it is called cubed it should be about an 1" square.
Minced is sometimes called ground.

Tenderised is called tenderised in my part of the world, where a product has to labelled as to what it is. That is what I would think you have discribed

they charge you more for stuff like that but
you can do all kinds of things with cubed meats

I cut my own boneless skinless chicken into cubes when making a home made pot pie
or
i cube chicken and brown it with some onion and seasoning. add some cream of chicken or/and cream of celery or/and cream of potato soups and some water to get a creamy texture for gravy.. yummy over rice, pasta, or potatoes.
optional can of mixed veggies. and noodles.. for all in one dish

cubed pork can be done in many ways like that too..

Steve G is correct.
Cubed meat has been put through a machine to make it tender.
It's the same as bashing it with a meat mallet.
