I make these at least 2 times a week at my restaurant and the secret to good mashed potatoes is to boil the potatoes in well salted water, be generous with salt and seasoning (I just use salt and white pepper usually, but roasted garlic is good too), use lots of real butter and I prefer half/half to milk or cream.
Start slow when adding your seasoning so you don't overdo it, but keep tasting until you have the flavor you want. If they are dry, add more dairy until they are as creamy as you want.

They would use real butter and heavy cream, not marg and milk. Here's a healthier option that gives you great flavour - cream cheese! I like herb and garlic flavour, but cucumber dill or any other savoury flavor would work well too. Chip dips are a nice option too! Enjoy!!

Put plenty of BUTTER in them, Sorry marg wont do.
Mash them very well and whizz them as much as you can, Temper tantrums are good.
A little milk, sometimes a little cheese salt and pepper.
