air has a constant pressure....pull the trigger and you get gas....co2 has to turn into gas, squirt, freeze, thaw in a constant cycle every time the trigger is pulled.
it's also why some rifle ammo can be far more accurate than others. things like the .17m2 for example....all the powder, what tiny bit there is, fires and reaches a consistant pressure while the bullet is still in the barrel. others are still firing as the bullet moves down the barrel so there's a constant push, stop, push, stop as it moves. things that reach a constant pressure can be sighted in and aimed....spurts of power can't be to such a degree.

Co2 is NON regulated that means it comes out of the bottle and expands in the gun this takes heat to expand and as you use the co2 the guns temp changes( my a-5 will frost if I go full auto and blow half a hopper or so) because of the temperature change the volumetric effeciantcy and expansion rate of the gass changes)Nitro/air is stored at 3000psi or more(co2 165 ish psi) the regulator knocks this skull shattering pressure down to a psi the gun can handle a volume of air is used not a presure. because the regulator is in place and air does not dramaticlty change in elasticity over a wide temperature range it gives more consistant shot to shot readings.
THAT BEING SAID...
some guns perform better on co2 than on air/nitro(air is 80%nitrogen)it is just they way the guns manufacturer designed them.

its because you will some times get liquid co2 where you were meant to get co2 gas, liquid and gas have different properties so when you get liquid into a mechanism designed for gas it doesn't work the same,
compressed air is always a gas so it is more predictable and will give a consistent operation even though its more dangerous (puncture a compressed air tank and you get shrapnel (bad) when you puncture a co2 tank all you get is freezer burn(not as bad, but still bad))

Compressed air give more reliability when it comes to output. That makes the paintballs more accurate.
