You can search for toddler activities or crafts, and some of the websites will allow you to sign up for their newsletters.
Toddlers love glue, paint, and stickers. You don't have to plan anything spectacular.
Your local library should have a lot of books available to you on crafts.

It's a great idea to set up a 'sharing ideas' meeting with other teachers in your area. We have one every term or so, where we alternate between each other's schools, get together and have a chat and cuppa while discussing ideas and issues. Everyone usually brings something interesting in to share. Also, you get to see other teacher's work while you're there and it's a great way to share resources, solve problems, make friends and collect ideas.
As a teacher with over 10 yrs experience, I would recommend painting, playdough, gluing and fine motor activities such as threading pasta. Think 'messy is best' for fun and learning, so include water activities (colour it or add smells for fun) inc. water painting, straw blowing and soap sludge etc.
Focus on various textures, materials and tools and you'll keep them entertained and interested. Make prints, feel textures (put 2 paint colours into a see-through plastic sheet protector, seal with tape. Let children squish the paint, feel the bubbles of paint and watch the paints mix.Like fingerpainting without the mess).
Use music and dance, puppets and building materials. Sand play. Soft balls for hitting buckets are fun too.
You'll love it!
It's really easy. Think of topics, then make something the kids can decorate themselves using scrap bits and coloured paper shapes, natural substances such as leaves, sand (colour it) rice, wool, cut straws, cotton wool etc.
The learning is in the shared language experience while they are busy making the items. Keep it simple, it's less stress for you and more fun for them.
