I have an empty nestea jar (tall and has a nice lid to it) which I clean celery and stand it in about an inch of water. I eat the crispy celery for a while and use it in salad and then cut what is left in diagnol slices and freeze them for use in chinese stir fry and soups or anything cooked that can use some celery. I was tired of throwing out the tail end of the celery and having to buy some to season soup or making homemade stuffing.. etc So this is my economical recycle celery deal.. :)

When I buy any vegetable or fruit and bring it home, I try to immediately put the fruit or vegetable in "ready-to-eat" condition (minus the washing because many will mold fast if washed and left to sit in the fridge). This means I will cut the ends off the celery, pick all the grapes, etc. Then I will place them in freezer-capable ziploc baggies because they can keep out air even in the fridge better than the bag they came home in. Air and moisture are bad for most fruits and veggies if you plan on keeping them in the fridge for a long time.

I usually chop the end off and then put the celery in a covered container of cold water and keep in refrigerator it stays fresher longer.

Cut the ends off at the base of the stalk and stand them in water.

Eat it sooner . . . otherwise it eventually gets real soft and limp no matter what you do. I mean it's fresh food, and it won't stay fresh forever!!!
