my family goes crazy over their fried chicken. you can buy strips or pieces and it is rather inexpensive. To save some money you can always make potato or pasta salads for 1/3 of the price. Congrats!!

I like the idea of the chicken salad wraps. I also want to mention a really yummy salad that most everyone will like and it is so easy!!
Tuna Macaroni Salad
1 lb box of elbow macaroni
2 cans of drained tuna
Around 1 1/2 cups of mayonaise (I don't really know how much, just add some until it looks good.)
Salt and Pepper to taste
Mix it together and chill. Make as much as you want. It is so good. You might want to add a little extra mayonaise just before serving because the noodles will absorb some of it during chilling.

Assorted dips would be good, veggies and dip, breads and dip, fruits and dip, chicken fingers, beef skewers because these don't have to be kept warm (some do, so be careful in choosing). Another good option is a cheese and fruit tray, to go with the winery theme. Of course, you could always talk to other caterers and see if they have equipment for this situation, where there is no kitchen. Something like an electric/gas burner should work, but they would know best.

Antipasta Salad
* 1/2 cup vegetable oil
* 3 tablespoons red wine vinegar
* 1 clove garlic, minced
* 1 teaspoon dried basil
* 1/8 teaspoon crushed red pepper flakes
* 1 teaspoon salt
* 6 ounces macaroni
* 1/4 cup grated Parmesan cheese
* 2 cups broccoli florets
* 4 ounces sliced pepperoni sausage
* 10 cherry tomatoes, halved
* 1/2 cup shredded mozzarella cheese
DIRECTIONS
1. Cook pasta in a pot of boiling salted water until al dente. Drain.
2. In large bowl, stir together oil, vinegar, garlic, basil, and salt and pepper. Toss with warm macaroni to coat well. Toss with Parmesan. Cover, and refrigerate 2 to 3 hours.
3. Add broccoli, pepperoni, and tomatoes; toss well. Sprinkle with mozzarella cheese, and serve.
Chicken Salad Wraps
* 2 (10 ounce) cans chunk chicken, drained and flaked
* 1/4 cup chopped onion
* 1/4 cup mayonnaise
* 4 tablespoons fresh salsa
* salt and pepper to taste
* 6 (10 inch) flour tortillas
* 12 lettuce leaves
1. In a small bowl combine the chicken, onion, mayonnaise, salsa, salt and pepper. Mix together.
2. Line each tortilla with two lettuce leaves, then divide chicken salad mixture evenly among each tortilla and roll up, or 'wrap'.
