mini meat loaves,,, add the ingredients you like to hamburger meat,,,,, oinion,,, bell peppers,,, steak sauce, etc, then shape into small loaves,,,,,,bake for about 45 mins at 350, or till well browned,, you can freeze the extra ones, just wrap well in aluminum foil or any freezer storage container,,,
also, when i am just cooking for myself, i like quick and easy,,,,
a can of cream of chicken soup,,,, with a can of tuna or canned chicken tossed in,,,,, a little water, and whatever frozen veggies you have on hand,,,,,, heat all well,, then put over toast or bisquits

Any recipe will work, just throw the leftovers in the freezer for a later date.
I usually go to Sam's, buy the boneless/skinless chicken breasts, I marinate them in Italian dressing over night, cook them up on the grill then freeze them.
When I want something, I take out a breast, then pour over some marinara sauce, top off with a slice of provolone cheese and have chicken italiano.
or, get a can of cream of asparagus soup, put two breasts in a dish, with the soup and half a can of milk and bake it till it's all hot.
lemon chicken, the recipe is on the Campbell's soup can. oooooh it's delicious.
I have some mashed potato's or rice with it.
or slice a breast up and put it on a flour tortilla with some shredded cheddar cheese, nuke it for about 30 - 45 seconds, fold it over,then pop it in the toaster oven and let it crisp up for a nice chicken casadilla.
Many things you can do, and it doesn't just have to be for one.
That's why we have freezers. LOL

MAKE A PACKET OUT OF ALUMINUM FOIL AND ADD I BONELESS SKINLESS CHICKEN BREAST. COVER WITH HALF A JAR OF SALSA (I USE GENERIC SAMS CHOICE BRAND MEDIUM). SEAL THE PACKET UP TIGHT.BAKE AT 350 DEGREES UNTIL DONE( I USUALLY MAKE TWO PACKETS AND IT TAKES ABOUT AN HOUR).SERVE OVER YOUR FAVORITE COUSCOUS OR RICE. I ALSO, MAKE A BAG OF FROZEN VEGGIES TO SERVE WITH IT.IF I AM IN A HURRY I WILL CUT UP MY CHICKEN IN BITE SIZE PIECES AND PUT MY CHICKEN AND SALSA IN A SAUCE PAN & COOK ON MEDIUM HEAT FOR 10-15 MINUTES OR UNTIL YOUR CHICKEN IS DONE.EITHER WAY IS DELICOUS!
