Why would you want to make a squirrel soup? I find the best way to get meat off of any bones is to boil the meat for quite a while and then pick it off the bones....I have a pan in which a metal colander sits, I usually put whole chickens in the colander and then when I'm ready to take the meat off the bones, I can lift the colander out, but the broth can be left behind to flavor the soup.

Boil the meat off the bones or pressure cook it off the bones Then you can make your soup my preference is squirrel and dumplings or (squirrel gruel) which is made with corn meal . My grandma made both she was English and Cherokee Indian lived in the Ozark hills all of her life and raised her family on this diet. they survived on stews and soups of the wild variety.
It is good you try this it brings out mans survival instincts.

Angela d has it right.
Boil it until it is falling of the bone then debone it.
I like to use a pressure cooker on squirrels to cook the and then debone.
Then make your Squirrel and dumplings or squirrel stew.

Hope this helped
