2 lbs ground beef 80% lean (at least half of the meat should be less than 90 % or you really sacrifice on flavor.
1/2 med onion chopped fine
1/3 of a sleeve of saltines - crushed (not too fine)
1 T. salt
1 t. pepper
1 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried dill weed
1 t garlic powder
1/3 c milk
1 egg - beaten
3 shakes of Worcestershire sauce
Mix everything except egg and milk. When meat and spices are well mixed, add the egg, milk and Worcestershire sauce - mix well. Put mixture into a loaf pan and press firmly until level.
Put into cold oven - turn to 350 degrees. Bake about 1 hr 30 min. You can insert a butter knife down into the cent to see if it's one. If juice comes out clear it's done. If juice runs pink, cook about 15 minutes longer.

get some ground beef
bellpepper
onions
tomato sauce
cheese
s&p, seasoning salt
1 egg
put it in a casserole dish or something with some depth. Cook it around 350 for 50-60 or until the meat is cooked thoroughly. mix an egg up in a separate dish. Dice some onion and bellpepper up, and if you want , you can sautee it and then add it to the meat. Add the veggies and the egg, seasonings, and start shaping your meatloaf in the dish. I mix up my tomato sauce in a separate bowl and season it real good and add sugar to reduce some acidity. i add the tomato sauce before it's done because that groundbeef will give off some grease so you might have to drain it, then add the sauce. then you can add the cheese and even breadcrumbs. good luck

I love meatloof too.
Use lean ground beef, a half cup of bread crumbs, a couple eggs for binding, use favorite spices, salt, pepper, celery salt, oregano, thyme, etc. Mix together and form into the loaf pan. Put a sauce on the top. Barbeque, steak sauce, or even catsup works well. Put a piece of foil on the sauce so it doesn;t burn.
