STRAWBERRY AND CREAM CHEESE CREPES
CREPE BATTER:
2 eggs
1/4 c. milk
2 tbsp. water
4 tbsp. flour
1/8 tsp. salt
FILLING:
3 oz. cream cheese, softened
6 tbsp. cottage cheese
1/4 c. sugar
SAUCE:
2 c. fresh strawberries Or frozen unsweetened & thawed
1 tbsp. lemon juice
1/3 c. sugar
Batter: Beat eggs, milk and water. Add flour and salt, beat just until smooth. Lightly oil a crepe pan or medium skillet. Heat pan over medium heat. When pan is hot spoon 2 tablespoons batter into pan and rotate pan to spread evenly. When edges of crepe are browned, turn crepe onto a plate.
Filling: Place cream cheese, cottage cheese and sugar in mixer. Blend until smooth. Set aside.
Sauce: Coarsely chop strawberries. Add lemon juice and sugar. Toss lightly. When ready to serve spoon 2 tablespoons filling into each crepe and roll. Arrange crepes seam side down on plate. Serve immediately with fresh fruit sauce.
Makes 12 servings, 1 crepe each.

APPLE CREPES
CREPES:
2 eggs
1 1/2 c. milk
1/2 tsp. salt
1 c. flour
2 tbsp. melted butter
FILLING:
8 apples
3 tbsp. butter
2/3 c. brown sugar
1 orange rind, grated
1/4 c. raisins
Beat together crepe ingredients. Cover and let stand for 30 minutes. Cook in small crepe size pan (greased on both sides). Peel apples and cook until tender in large pan. Add remaining ingredients. Place filling in center of crepe and roll into crepe shape.

Chicken and Asparagas Crepes:
3 eggs
1 cup half and half
1/4 tsp sugar (helps them brown)
1 T vegetable oil
1/4 cup flour
1/2 tsp salt
Blend until a thin, smooth batter forms. If mixture is too thick, add more half and half, if too thin, add more flour 1 T at a time
Filling:
1 Rotisserie chicken, skin removed and boned
1/2 cube butter
1/4 cup flour
1 cup milk
1 cup half and half
1/2 tsp kosher salt
1 tsp thyme
1/2 to 3/4 cup asiago cheese
1 lb fresh asparagas, trimmed and cooked tender crisp
Melt butter in sauce pan. Add flour to make a rue. Brown slightly and add milk, stirring constantly. Add salt and asiago cheese. Remove 1 cup and add chicken to the rest.
To assemble: make crepes in non-stick skillet. To fill each crepe, take 3 stalks of asparagas and lay in the middle of each crepe. Top with cheese/chicken mixture. Roll up and place in baking dish seam side down on your plate. Top with 2 T of the sauce and a sprig of Thyme.

Strawberry crepe recipe - Mexican style or with a basic crepe recipe.
This strawberry crepe recipe is a quick way to get a healthy breakfast on the table in the morning.
Kids and adults will love the yogurt/cream cheese filling topped with fresh strawberry's.The tortilla's, cooked in a little butter, make up the delicious and easy crepe. Your family will be requesting this Mexican breakfast recipe more than once I'm sure.
Strawberry Crepe
Ingredients:
* 3 oz. 1/3 fat cream cheese, softened
* 8 oz. container strawberry lo fat yogurt
* 1/2 tsp. lemon juice
* 2 fajita-size flour tortillas or my basic crepe recipe
* 2 cups strawberries sliced and stems removed
* sugar to taste
* sprinkle of cinnamon
* butter
Directions:
In a medium size bowl, add the yogurt and cream cheese. Mix with an electric mixer until smooth. Then add the lemon juice and mix well.
In another bowl add as much sugar to the strawberry's as to your liking, maybe 1/2 to 1 tsp.
Add a little butter to a frying pan and heat to medium. Place a tortilla on top of the butter and work it around to cover the tortilla with butter as it melts. Place another slice of butter on top of tortilla. Turn the tortilla over when it browns. The butter will cook into the tortilla.
Don't let the tortilla get too crispy. You will be rolling them with the filling inside.
When the first tortilla is done, remove it to a plate to cool. Cook the next tortilla the same way adding butter as needed.
When the tortilla's are done, add a couple of spoonfuls of the yogurt mixture to each tortilla down their centers. Lay slices of strawberry's on top of the yogurt mixture and sprinkle with a little cinnamon.
Roll each tortilla up with the seams facing down. Add the rest of the yogurt mixture on top of the crepes and add the remaining slices of strawberries. Top with an additional sprinkle of cinnamon.
Serve your family this strawberry crepe recipe for breakfast and they will think you are letting them have dessert! Don't tell them it really is a healthy breakfast recipe.
