We mainly live on ramen noodles, rice, potatoes, frozen vegetables, macaroni and cheese, fish sticks, fries, hamburger helper, chicken nuggets, pot pies, spaghetti, and occassional grilled pork, and broccoli cheese soup. Can anyone recommend anything else that I can prepare (I have very little experience in the kitchen) that is really cheap to make??

We also eat a lot of deli sandwhiches, eggs (cheese omelets mostly), PB&J, and manwhich.

Here is a really easy recipe daughter should love it and you don't need a whole lot experience.

PORK CHOPS


1 tbsp. margarine
1/4 c. onion, chopped
1 c. stuffing mix
1/4 c. water
1/8 tsp. oregano
1 can pizza sauce
1 c. Mozzarella cheese, shredded

Preheat oven to 350 degrees. Bake 1 hour. Melt margarine in frying pan over medium heat. Cook onions in melted margarine until soft. Remove from heat. In a bowl, combine stuffing mix, water, oregano and onions. Mix well. Split mixture in half. Spoon each half of mixture into baking dish, making 2 separate mounds. Place a pork chops on top of each mound. Pour pizza sauce over each. Cover dish and place in oven. Bake for 1 hour. Remove from oven and sprinkle cheese over the top and enjoy with your best friend.

And here's a healthy dessert.

1/2 c. low-fat milk
1 c. peeled, sliced, frozen bananas

Put both ingredients in blender or food processor and blend on high until thick and creamy.

I can name so many things. Lol Anyways, if you happen to like Mexican, you could try Chicken Enchiladas. You can either buy the box and add chicken or if your store doesnt have it, all you need is
1lb chicken or if they have the bowl of shredded chicken that is best(its by tyson)
1 pk of taco seasoning if they dont have the shredded chicken
1 pk of small tortillas
1 big can of enchilada sauce
1 pk of shredded cheese

Cook the chicken, season with the taco seasoning. follow directions. in a nice sized pan pour half of the enchilada sauce into it. spread chicken into the tortillas and close. Place in pan. Cover with the rest of the enchilada sauce and cover with shredded cheese. Cover with aluminum foil and bake for 25 mins at 350 degrees.

Also another thing. You can make chicken tenders that arent breaded and season them with salt, pepper, and some lemon juice and bake them. Those are really good. I have lots more but it would take up the entire page.

Breakfast for dinner is cheap and a huge hit with kids. You can make scrambled eggs, Eggo waffles, pancakes--add fruit for more nutrients, and sausage and bacon are pretty cheap too. French toast, you can go on and on. Personally, I think ANY of these is a better choice than Ramen noodles--aka salt soup--eggs are so cheap and high in protein, very easy to cook, and there are so many ways to make them.
Instead of jarred sauce--add some olive oil, a pinch of salt, pepper, parsley and Granulated garlic to your pasta and toss with pecorino-romano cheese--you can get it in a shaker, but it is so much better as a chunk and grated onto the pasta--better flavor- you use less, so cheaper in the long run.

Romaine Cobb Chicken Salad
Slices of barbecued chicken and diced avocado and tomatoes top chopped Romaine lettuce tossed with buttermilk ranch dressing.

INGREDIENTS
1 head romaine lettuce
4 barbecued chicken breasts, sliced
2 Hass avocados, chopped coarsely
2 tomatoes, coarsely diced
6 ounces good quality blue cheese
6 ounces buttermilk ranch dressing
DIRECTIONS
Toss romaine lettuce in Ranch buttermilk dressing, season with salt and freshly ground pepper. Top with chicken, avocado, tomatoes, and blue cheese.

Chicken Crescent Roll Casserole

1 roll crescent rolls
3 chicken breasts, (seasoned, cooked and chopped)
Grated cheese, your choice
1 can cream of mushroom soup (may substitute cream of chicken or cream of celery)
¾ cup milk

Roll crescent rolls flat. Put a little chicken and cheese on each crescent and roll up. Coat baking dish with butter or non-stick spray. Place rolls in baking dish. Brush tops with melted butter. Mix soup and milk together and pour over rolls. Bake at 350° for 30 minutes or until brown.

Chicken Pot Pie

2 pie crusts
2 to 3 cups mixed vegetables, cooked
2 cups diced chicken
1 can cream of celery soup
1 cup grated cheddar or Colby cheese
Milk as needed for consistency

Place pie crust in 3-inch deep casserole dish and bake until lightly browned. In a large saucepan, cook vegetables until done, add diced chicken, soup and cheese. Blend this and cook until cheese is melted. Add milk as needed for desired consistency. Remove crust from oven and add filling mixture. Secure the second crust on top and make slits for steam to escape. Run it back into the oven until the top crust is browned, 10-15 minutes

Dad’s Potato Soup

5 pounds potatoes, peeled and diced
1 to 2 medium onions, diced
1 stick butter
8 ounces milk
1 quart Half & Half
Salt & Pepper to taste
¼ cup parsley, chopped
Cheddar cheese, grated

Boil potatoes in salted water until done. Drain water. In a skillet, saute’ onions in butter. Add onion mixture to potatoes. Add milk, Half & Half, salt and pepper. Cook on medium heat until it thickens slightly. Add more milk to suit preference. Add parsley, simmering on low heat for a few minutes. Serve topped with cheese and/or bacon bits

Pasta Salad

3-4 Eggs, boiled and sliced
1 Cup Celery, chopped
¼ Cup Green Onions, chopped
2 Cups Chicken Breast, diced (Optional)
Mayonnaise
Dijon Mustard
Salt and Pepper to taste
Spiral or Penne Pasta, cooked (1# bag ?)

Boil and slice 3 to 4 eggs. Cook pasta and drain. Have the celery, green onions and chicken prepared in a large bowl. Blend 1 tablespoon of mayonnaise to 1 teaspoon of Dijon Mustard. (I usually use two to three heaping tablespoons of mayonnaise to two to three heaping tablespoons of mustard. Use enough that it isn’t too dry.) Add salt and pepper to taste and blend. Add the pasta and stir well to combine.
This is quick and easy. Add, reduce or delete as desired. I don’t use the chicken and add more celery. My family loves this warm and as cold leftovers. The only problem is that there are rarely leftovers!! As far as the mustard, I especially like Westbrae Natural (Dijon Style Mustard). It comes in an 8 oz. Jar. This is another one of those recipes that I usually have all the ingredients handy and is so fast to prepare.

Salmon Croquettes or Patties

2 large potatoes
1 (12.5 oz) can skinless, boneless salmon
½ cup finely chopped green onions
2 teaspoons fresh chopped parsley
2 eggs, beaten
salt, pepper and red pepper to taste
cracker meal for breading

Peel, dice and boil potatoes until soft enough to mash. Combine with salmon, onion, parsley, egg and seasonings in a large bowl. Beat on low speed of electric mixer until well blended. Shape into patties, croquettes or balls. Roll in cracker meal and fry in 1 to 2 inches of oil in heavy skillet until golden. Drain on paper. Serves 4 to 6.

Superior Meat Loaf
(from the Lipton Onion-Mushroom Soup Mix)

1 envelope Lipton Onion or Onion-Mushroom Soup Mix
2 pounds ground beef
1 ½ cups soft bread crumbs
2 eggs
¼ cup water
1/3 cup ketchup

Preheat oven to 350˚
In a large bowl combine all ingredients. In a large shallow baking pan, shape into loaf. Bake 1 hour or until done. Makes about 8 servings.

Microwave directions:
Prepare ground beef mixture as above. In 2-quart oblong baking dish, shape into loaf. Heat at HIGH (Full Power), turning dish occasionally 25 minutes or until done. Drain, let stand covered for 5 minutes.



Sloppy Joes

2-3 pounds ground beef
1 medium onion, chopped
1-2 cups barbeque sauce

Brown ground beef, stir in chopped onions and cook until they are transparent. Pour in barbeque sauce (a little more or less as desired). Let the sauce kind of cook in for a few minutes. Serve on hamburger buns with or without mayonnaise. The kids love this one.

Taco Salad

Brown your seasoned hamburger meat. Add 1 cup diced onion and cook on medium heat until onions are transparent. Drain fat off. Add 1 package taco mix. Let cook in for 10-15 minutes. Add 1 can red beans, stir in. Add one cup grated cheddar cheese. Stir in 1 1/2 cups crushed totinos chips, stir in then immediately pour this over torn lettuce and diced tomatoes. Serve in salad bowls and top with Kraft Thousand Island Dressing.

Vegetable Sauté with Rice

2 Tablespoons butter
1 cup chopped onion
1 cup chopped celery
1 cup chopped bell pepper
1 cup sliced mushrooms
1 medium tomato, diced

1 ½ cup Uncle Ben’s rice
3 cups water
1 tablespoon butter
½ teaspoon salt

Microwave the rice, water, butter and salt on HIGH for 7 ½ minutes in a microwave safe dish. Stir. Microwave 28 minutes on MEDIUM power. Leave in microwave covered for 5 minutes.

While the rice is cooking sauté the onion, celery, bell pepper and mushrooms in1 Tablespoon butter. Once sautéed, remove from heat and add the diced tomato. Cover and let sit until rice is finished. When the rice is finished, add the sautéed vegetables and stir together well.

We like this served alone or with coleslaw. Tonight I served it with the grated sweet potato casserole from my little blue cookbook. It has a really good flavor, but you can add or delete from the vegetables.

This is FAST and TASTY!!!
