Shreded coconut is high in fat and the fat can go rancid. This will happen faster at a higher temp, so refrigerated is better.it can be frozen. It can be dried. It lasts several weeks or months.
It can grow mold if it is too damp.

Considering that we use coconut juice and sugars to grow the sooty mold because it is easy and cheap, you bet your bottom it can ruin! Mold thrives on the sugars in coconut!

yes,it can spoil.if u dont use them within 5 days of opening the can,u should better freeze it.when i thaw it prior use,i see that it gives out some coconut milk...........then i use it 4 cooking.

Yes. All food will eventually spoil from their enzymes and bacteria/molds that grow on their nutrients.

It can go rancid if not properly stored. I store mine in the lower portion of my refrigerator.
