When I make chocolate truffles, the inside ganache always turns out perfectly, but the outer chocolate coating gets dry & turns almost white when left out for only an hour or so. How do I prevent this from happening?

Don't put them in the fridge and keep them kinda moist. maybe wrap them in a damp paper towel.
