Real Guiness is made by adding 3% pasteurized sour wort back into the mash - this is what gives it it's special "tang".
Real Guiness is not available in the states because of this fact.
Any Guiness imported into the states by law does not have the
soured wort added.
In order to do this at home you need to sour a small amount of your wort. (3 1/2 cups) Make your beer (recipe follows) and take 3 cups of wort into a seperate vessel and let it cool. Place a piece of aluminum foil directly on top of the wort it and let it sit at room temp for a few days.Remove foil (it will reak !) and any "growth" that may have occurred. Strain into a pot and boil for 15 min. Your soured wort is now pasteurized - meaning you've killed all the bacteria that made it sour - perfectly safe. Add this into your fermenter, continue fermentation, then rack off and bottle
7 lbs dark malt extract
3/4 lb crystal malt
1/3 lb roasted barley
1/3 lb black patent malt
2 oz Northern brewer hops
1/2 oz fuggles hops
wyeast # 1084 (Irish stout)
add grains to 1 1/2 gal cold water, bring to boil and remove grains.
add malt extract, and northern brewer hops and boil for 60 min.
add fuggles hops, boil for 5 more minutes.
sparge into fermenting vessel and fill to 5 gal. with cold water.
pitch yeast when cool. pitch soured wort when ready.
Bottle when fermentation is complete
(3/4 cup corn sugar dissolved in a pint of boiling water for priming).
Note: this is carbonated, not nitrogenated like guiness is,
but boy oh boy does it taste good.

Sorry but they are not going to tell you, you can get the rough ingredients off their site but not the specific names of the hops etc so I'm afraid you are stuck with paying for it.
