If you freeze your banana bread before baking, the bread will not come out right. I wouldn't freeze the unbaked banana bread. As soon as you start mixing the batter, the ingredients start reacting with eachother...particularly the leaveners (baking soda). It would be best to bake it and then freeze it.
Cookie dough will last quite a while in the freezer. I know I've stored some for up to a year. It's best to let it stiffen in the refrigerator then roll it into a cylindar (just like the package cookie doughs). Wrap the dough in cling wrap and the put the whole thing in a freezer bag. Make sure you write the date on the bag. This is the same method I'd use for the baked banana bread.

You can freeze unbaked banana bread dough, but the baked product freezes better. It will not rise as well when thawed.
Frozen cookie dough is good for a year according to the package I have. If it does not thaw for some reason there is no reason it should deteriorate. The fats can go rancid after a year.

Unbaked cookie dough will last six to twelve months in the freezer, some say indefinitely, but especially if you have a frost free freezer it can affect the texture and ultimately the taste.
I don't like to freeze batters, dough are OK, but not batters. Best to bake the banana bread, let it cool, then wrap the whole loaf or individual slices tightly in wax paper, foil and freezer bags and pop it in the freezer.

I wouldn't freeze unbaked banana bread. The baking soda starts acting the minute you add it to the recipe. If you freeze the unbaked batter, you will most likely affect the texture and height of your bread. Bake it off, then freeze the completed loaf.
I've kept unbaked cookie dough in the freezer for as long as six months, very tightly wrapped and then sealed in a freezer bag, with no difference in taste or texture. It's rare it lasts that long, however.

COOKIE DOUGH:
Cookie dough will freeze well for 4 to 6 weeks. Rolls of dough should be sealed tightly in plastic wrap (chill in refrigerator first before freezing). Other kinds of dough should be stored in airtight containers. Drop cookies (unbaked) may be frozen on cookie sheets and transferred to freezer bags. Let stand at room temperature for about 30 minutes before baking.
Don't try to freeze soft meringue-type cookie dough. Chocolate chip, brownies, peanut butter, and sugar cookie dough (or anything similar) freezes well. Let the dough defrost in the refrigerator (about 2-3 hours). Make sure to label the container with the date and type of cookie dough.
BANANA BREAD DOUGH:
If you are making a regular loaf, use twice the normal amount of yeast to get a really good "rise" out of your loaf.
If you are going to use the loaf to make a bread roll, just use the regular amount of yeast in the recipe.
After you punch down the loaf, form it into loaves no more than 2 inches thick, so that it will thaw more uniformly. (Otherwise, part will thaw and start to rise while part of it is still frozen.)
Double wrap it before freezing. I like to use first wax paper, then plastic wrap or freezer paper, and then I put it in freezer bags.
Lightly grease (oil or butter) the paper or plastic wrap that touches the dough.
Do not store the dough in the freezer for more than 2 months.
If you are making a regular loaf with the bread, grease your bread pan, set the frozen dough in the pan, cover with a cloth, and let thaw and rise for about 3 or 4 hours at room temperature. Bake as usual.
You can shape the loaf by letting it thaw as above, shape, then let rise until doubled. Bake as usual.

I would go ahead and bake the banana bread before freezing it. I've had cookie dough in the freezer for over 2 months, and the cookies came out better than the unfrozen ones in my opinion. But, cookie dough will last at least 6 months if you wrap it correctly with plastic wrap and aluminum foil.

u can but i would bake it and then freeze it because you could damage the gluten and yeast in bread when freezing unbaked dough. unbaked cookie dough can last for months
