I buy a bag of baby spinach then quickly saute it, just until slightly wilted, in olive oil with fresh chopped garlic and a bit of salt. It is delicious that way! Try it some time.

Well, mostly we just eat frozen chopped spinach that's been nuked for 6 min. (still in the box but without the paper, on a plate), then squeezed of excess liquid. For others in the family, I put a small pat of butter or "buttery spread" on top... I need to eat it plain to keep fat low.

But when there's time, I like to fix it Italian-style... which is basically what morgorond described, but with little or no salt, and also stirring a scrambled egg into the garlicky spinach at the last minute --then cooking for a little longer till it's no longer runny. Yum!
Strangely enough, canned spinach is even better for this than frozen or fresh (it's got a stronger flavor), but otherwise I wouldn't eat canned spinach if you paid me. (both canned and frozen spinach need to be wrung out pretty well before sauteing along with the garlic, and the frozen will need to be cooked or at least brought to near room temp.)

I would use Spinach as a substitue for lettuce. The nutritional value has to be better and the taste is deliteful! I use a lot of spinach on my sandwhichs.

I only like my spinach in a salad. I hate it when its cooked.

Tucked nicely between layers of pasta and ricotta cheese. Lasagna is definitely the best!!! Mmmmm! Now I want lasagna!

Looking for something different? Buy frozen leaf or canned,DRAIN AND SQUEEZE well, dip in egg and cornmeal,fry in oil,bacon grease or butter Crisco. Comes out nice and crunchy.

get some baby spinach, boil it, strain it, season with just about anything (I usually just use sesame seed though) and you can refridgerate it or eat it warm... id choose refridgeration though
