No, and we never did. Animal sacrifices never forgave sin--basically, they put in a good word for you with G-d, but didn't forgive your sins. A man without a bull to sacrifice was just as forgiven as the man with one. Besides, the only places sacrifices can be done is at the Temple in Jerusalem, and that was destroyed in 70 C.E. Now we do a thing called teshuvah (meaning return, repent, or answer) which consists of a few steps. For sins committed against another person (mortal) you do this:
1. recognize that what you have done is wrong and feel remorse for it.
2. apologize to the person you have wronged. nobody can do this for you, only you are responsible for the wrong and only they can forgive you.
3. try to make it better (fix it--i.e. if you broke their flowerpot, buy a new one or fix the old one)
4. resolve and actively try not to commit the wrong again
For sins against G-d, we have a day called Yom Kippur, which you ask forgiveness through prayer.

Based upon the "Old Testament" Jews do nothing. The "OT" is a Christian book so no self respecting Jew would follow it.
Jews have their own holy books, the sum total being called the "Tanakh." And even according to their own holy books, they do not need to sacrifice animals for the forgiveness of sin.
Nor do they need Jesus.

No. Animal sacrifices were only permissable in Solomon's Temple. Solomon's Temple was destroyed by the Romans in the year 70 CE. It would be in violation of God's laws to sacrifice animals outside the Temple.
