The easy way is boiled smashed potatoe or leftover mashed potatoes with a little pancake mix or flour and baking soda, egg, salt and pepper. Shape thick batter into patties and fry in oil, margarine or butter.

4 large potatoes
1 yellow onion
1 egg, beaten
1 teaspoon salt
2 tablespoons all-purpose flour
ground black pepper to taste
2 cups vegetable oil for frying
DIRECTIONS
Finely grate potatoes with onion into a large bowl. Drain off any excess liquid.
Mix in egg, salt, and black pepper. Add enough flour to make mixture thick, about 2 to 4 tablespoons all together.
Turn oven to low, about 200 degrees F (95 degrees C).
Heat 1/4 inch oil in the bottom of a heavy skillet over medium high heat. Drop two or three 1/4 cup mounds into hot oil, and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown. Transfer to paper towel lined plates to drain, and keep warm in low oven until serving time. Repeat until all potato mixture is used.

MAMA'S POTATO PANCAKES

3/4 c. bread crumbs (dry)
2 1/2 c. potatoes (grated)
1 sm. onion (grated) or 1 tsp. onion powder
1 egg (beaten)
1/2 tsp. salt
1/2 sage
1 tsp. baking powder
dash of pepper

Mix all ingredients until well blended. Drop batter by tablespoonfuls onto hot, greased skillet. Spread the batter and brown pancakes on both sides. Serve hot with butter. Makes 10 pancakes.

Hint: Using bread crumbs instead of flour makes the pancakes lighter and they brown quicker.

Potato Pancakes Polish:

28 ounces firm potatoes, peeled
1 large sweet onion, finely grated
1 finely minced garlic clove
1 large egg yolk, lightly beaten
2 tablespoons flour
3/4 teaspoon salt
1/16 teaspoon pepper
1/16 teaspoon cayenne pepper
1 tablespoons minced fresh parsley
1 large egg white, beaten stiff
vegetable oil or peanut oil

1. Finely grate potatoes and rinse with cold water 3 times till water runs clear. Add potato, onion in a large bowl with garlic. Drain and press out as much moisture as possible, using paper towels.
2. Add egg yolk, flour, salt, peppers and parsley. Mix thoroughly.
3. Fold in egg white.
4. In a heavy skillet, pour in 1/4-inch of the oil and heat over high heat. For each pancake, drop in a heaping tablespoon of the mixture and press down with spatula. Brown until crisp on both sides.
5. Enjoyed season with salt and pepper.

GERMAN FRIED POTATO PANCAKES

5 lbs. potatoes
2 lg. sweet onions
2 lg. eggs
1/2 c. self-rising flour
Salt & pepper to taste

Grate potatoes and onions together. Pour off excess juice, mix in eggs then add enough flour to thicken. Salt and pepper to taste. In large iron skillet, heat cooking oil; drop mixture into hot oil (about 2 inches pancakes). Brown to crisp on both sides. Serve hot.

Where I am from all I have ever seen my mom and mother in law have fixed tata cakes is to use the left over creamed/mashed potato's...use a egg, and some flour, mix up really well.

Put some oil in fry pan on med heat...allow to get hot and then drop tata mixture by heaping spoonfuls in the oil, smooth around to level it out and just fry em up.

I use mashed potatoes, a bowl full. I put in one egg, chopped onions, to taste, and about two - three tablespoons flour (either self rising or all purpose). Add salt and pepper. Mix together. If you need to, add a little more flour if too wet. Form into small /medium size patties. Fry in small amount of oil until browned, flip and brown on other side.

Don't do it the easy way, Don't use mashed potato's, those are just fried mashed potato's.

Grate the potato's and mix like others have suggested and fry them up thin and crispy.

Serve with apple sauce and maybe some pork and beans. ooooooooooooh it's sooooooooooo good.
