I used to know, but I forgot what seasoning to put in it. I know it is eggs and vegtables and cooked rice.

Cook the rice and LET IT COOL. Very important. Otherwise it will stick and won't be the right texture. It a hot oiled pan stir fry carrots and onions. When they're done to your liking add egg and scramble. Add cold cooked rice and soy sauce, pepper and other seasoning to taste. When almost done add the peas. If you like meat, you stir fry the meat first (beef, chicken, pork), when half done add carrots and onions, etc. If you like fish, add the fish just before the egg. Some cook everything separately such as making and setting aside the meat, the scrambled eggs, the vegies, etc all separately and then frying the rice in a hot oiled pan and adding the other stuff about half way through. Either way is good. Most important are not to use hot wet rice.

Start by cooking the eggs in a sort of scrambled egg/omelette type way, and then set them aside.

Heat some oil, and then (stirring away!) add some or (preferably) all of: garlic, fresh ginger, fresh lemongrass, fresh chillies, chopped onions.

Add any meat, and other vegetables (starting with the ones that'll take longest to cook, working towards the ones that hardly need cooking at all). When all of these are cooked, add the cooked rice and eggs, and ensure they get really well heated through. Finally add some soy sauce.

FRIED RICE

4 cups boiled rice
3 tablespoons olive or peanut oil
1 tablespoon dry green (or other) onion
1/4 teaspoon garlic powder (or 2 cloves fresh)
2 dried whole eggs
1 tablespoon soy sauce
2 cups chopped frozen (thawed completely) or fresh mixed vegetables (like carrots, broccli, cauliflower, ect.)

Sauté rice in oil for 5 minutes, stirring occasionally. Add green onions, garlic and veggies. Cook for several minutes. Combine eggs with soy sauce and stir into pan. Cook until eggs set.

pick up phone, dial number to local chinese restaurant and ask for fried rice!! heheh

the soy sauce and oil will give most of the flavor, but you can add any flovors that you loke to it.

I like Garlic Pepper and Lemon Pepper
