"Select globes that are deep green, with a tight leaf formation, and those that feel heavy for their size. A good test of freshness is to press the leaves against each other which should produce a squeaking sound. Size has little to do with quality or flavor. Small artichokes are just a smaller bud."

Besides what the others have said, the stem (stalk) of the artichoke should be firm, not bending much. If it bends, it means the artichoke is not fresh, it's becoming stale.

tightly packed, crisp green or purple leaves with a slight bloom. Fresh ones should feel heavy for their size, and the leaves should 'squeak' when the bud is gently squeezed
