You can get a lot of information about migration and sponsorship from the Department of Immigration web page

I understand there is a great need for tradesmen in Australia and I recall seeing a programme on TV recently where an electrician did just what you are thinking of. Your Aunt & Uncle could sponsor you and if they have confidence in you both and your children I am sure you would benefit from the experience. You don't mention Parents so I will not say more than 'have you consulted them and their feelings on having Grandchildren so far away?.

Take your mums and dads with you. Life in Aus isn't all a beach. They'll be priceless support in all sorts of ways. Very likely self-supporting too.
Happy landings!
