Gyro Burgers:
2¼ hours 2 hours prep
4 servings
3/4 lb lean ground lamb
1/2 lb lean ground beef
1 cup fresh breadcrumbs
1/2 cup minced onions
1 clove garlic, minced
1/2 teaspoon ground allspice
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 1/4 teaspoons salt
1/2 teaspoon ground black pepper
2 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/3 cup olive oil
4 plum tomatoes, chopped
1 small onion, slivered
1 small cucumber, seeded & chopped
1/2 head romaine lettuce, shredded
1 cup tzatziki, homemade or purchased
4 pita pockets
1. In a bowl, combine lamb, beef, bread crumbs, minced onion, garlic, allspice, coriander, cumin.
2. Add just 1 tsp of the salt and 1/8 tsp of the pepper and mix well.
3. Form into 4 patties, cover and chill 2 hours.
4. In another bowl, whisk together vinegar, oregano, 1/4 tsp salt, and 1/8 tsp pepper.
5. Gradually whisk in the oil until blended well.
6. Add tomatoes, sliced onions, and cucumbers and stir to coat.
7. Cover and let marinate at least 2 hours (no more than 8 hours).
8. When you are ready to cook your burgers, oil& preheat your grill and grill as you would any hamburger (10-15 minutes or so- or until no pink remains but burger is still moist).
9. When burgers are fully cooked, slit pita pockets open on the sides to form open pockets (you can warm the pita up by setting on the side of grill briefly) and place a burger inside.
10. Have bowls of the tomato topping, the shredded lettuce, and some tzatziki(a Middle Eastern style yogurt sauce) on the table for guests to add as desired.
11. The yogurt sauce is available in the dairy case near dips or at the deli counter or some markets or you can prepare a homemade version.

Gyros Meat:
1 lb ground lamb (from a roast)
1 clove garlic, pressed
2 teaspoons lemon juice
1/2 teaspoon basil
1/4 teaspoon marjoram, ground
1/2 teaspoon thyme
6 pita pocket bread
1/2 teaspoon rosemary
1/4 teaspoon salt
1/2 teaspoon pepper
1/8 cup parsley, snipped
2 tomatoes, chopped
2 onions, chopped
lettuce, chopped (optional)
Gyros Sauce:
1 (6 ounce) container sour cream
1 medium cucumber, pureed in a blender and strained to remove liquid
2 cloves garlic, pressed
1/4 teaspoon salt
2 tablespoons sugar
Combine lamb with all the spices; blend well and place mixture in skillet and cook over medium heat, stirring constantly, until meat is browned.
Drain off excess drippings.
Keep meat warm while preparing the Gyros Sauce.
Mix together well for the sauce. Butter 1 side of Pita bread and warm in oven; remove from oven and fill like a soft taco shell with meat, tomatoes, onions and sauce. Serve immediately

1 (4 to 5-pound) boneless leg of lamb, trimmed of visible fat
5 cloves garlic, peeled and cut into 20 slivers
1/4 cup extra-virgin olive oil
3 tablespoons fresh lemon juice
4 cloves garlic, minced
2 tablespoons chopped fresh oregano
1 tablespoon chopped fresh rosemary
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Essence, recipe follows

Tzatziki Sauce, recipe follows
Chopped tomatoes
With a sharp knife, make 20 slits across 1 side of the lamb and insert the garlic slivers. Place in a large non-reactive dish.
In a bowl, whisk together the oil, lemon juice, garlic, oregano, rosemary, salt, and pepper. Pour over the lamb and rub evenly across the surface. Cover with plastic wrap and marinate, refrigerated, for at least 2 and up to 6 hours, turning occasionally.
Remove from the refrigerator and let come to room temperature. Season lightly on all sides with Essence. Brush a grill lightly with olive oil and preheat to medium heat.
Remove the lamb from the marinade and place on the grill. Cook, turning occasionally until the meat reaches an internal temperature of 145 degrees F for medium-rare, about 1 1/2 hours. Remove from the grill and transfer to a platter. Tent with foil and let rest for 12 minutes before carving.
Thinly slice the lamb and place the meat in the center of the pita breads. Top with Tzatziki Sauce and chopped tomatoes, and serve.

well the meat you really can't fake... and the pita you can by anywhere. the best place to start with to make a great gyro is the tsatziki sauce.
i've seen it made with both yogurt and sour cream as a base. you can add cucumbers, dill, salt, parsley, oregano, or whatever you like to get the taste you want: be creative, there's no wonrg way to do it.
you might be ablre to buy strips of pre-cut and cooked gyro meat (it's a beef/lamb blend) or you could season your own lamb cuts... try oregano and lemon.
heat the pita on a griddle, add the tsatziki sauce and the hot meat, and finish up with tomato and onion. (add lettuce if you don't have enough meat) really, they're no harder than a taco to make as long as you can find the right ingredients.

My gyros are healthy and easy. I really dont have exact ingrediants since i use it so much. It's easy, though, so you can pretty much guess.
Yummy Gyros
Frozen chicken or turkey strips from your supermarket, thawed
One bulb onion, medium sized
One can coconut milk
Non dairy sour cream
2 cucumbers
Pita pockets
Curry spice
Any other spices you have, paprika, cumin, onion powder,
vegetables like tomatoes and lettuce
grease a pan and heat it on the stove. When hot, add coconut milk. chop poultry into medium size peices. Chop onions in similar peices. Put in coconut milk. spice to taste. While it cooks, chop 1 cucumber into peices. Add non dairy sour cream to cucumber. Mix and put in fridge. When coconut milk is reduced, fry until cooked through. Warm pita pockets in oven. Chop cucumbers and rest of the vegetables. First, in pita, put chicken, then cold sauce, then veggies. Enjoy
