Parmesan-Coated Sweet Potato Fries
Serves 4; Prep time: 15 minutes; Total time 40 minutes
1/2 cup all-purpose flour
3/4 teaspoon coarse salt
1/2 teaspoon ground pepper
2 large egg whites
1 1/3 cups grated Parmesan cheese
4 small sweet potatoes (about 2 pounds), scrubbed and quartered lengthwise
1. Preheat the oven to 425°. Line a large rimmed baking sheet with parchment paper or aluminum foil and then set aside.
2. In a shallow bowl, stir together the flour, salt, and pepper. In a separate shallow bowl, lightly beat the egg whites with 2 tablespoons of water until combined. Place the Parmesan on a sheet of waxed paper or put it in another shallow bowl.
3. Dip the sweet potato first in the flour mixture, shaking off excess. Then dip each wedge into the egg white mixture until coated. Finally, dip the sweet potato in the Parmesan, pressing the exposed surface of the potato into the cheese. (Don't worry if some gets on the skin.) Transfer potato wedges onto the prepared baking sheet as you go.
4. Bake potatoes until tender and crisp, about 25 minutes. Serve sprinkled with more salt if desired.

Toss the raw potato (or sweet potato if you really want a healthy French fry) in olive oil to coat the outside.
Sprinkle salt and lay on a baking tray to bake for about 15 - 18 minutes in the over on 425 (or until the skin is crisp).
Sprinkle with come fresh garlic or parsley and you have a healthy French Fry.

@@ OVEN FRENCH FRIES @@
1 tbsp. oil
Preheat oven to 475 degrees. Peel potatoes and cut into long strips about 1/2 inch wide. Dry strips thoroughly on paper towels. Toss in a bowl with oil as if making a salad. When strips are thoroughly coated with the oil, spread them in a single layer on a cookie sheet and place in preheated oven for 35 minutes.
Turn strips periodically to brown on all sides. If a crispier, browner potato is desired, run under broiler for a minute or two. Sprinkle with salt before serving.
Makes 6 servings.

This recipe i adapted from my stepmom to create the perfect healthy, tasty french fry!
potatoes
garlic salt
cracked pepper
olive oil
parsley
clove of garlic
Pam spray
chop potatoes into wedges. lay out on sprayed baking sheet. sprinkle lightly with pepper and garlic salt (A pinch of each) set in 400 degree oven for 10 minutes. While baking, chop parsley and put oin bowl. Chop clove of garlkic and mix. add olive oil until desired thickness (drizzling consistency. Set aside. Drizzle the sauce on both sides of the frenchfries (Flip with tongs) and sprinkle with a pinch more of garlic salt. bake until golden brown.
MMMM delicious. No deep frying AND olive oil is very healthy for you so dont us vegetable oil, it's not the same. if you have no other choice, its ok. The sauce bakes in and makes it crispy not ssoggy. It is sooo good. If you dont want the sauce, omit it and just add more garlic salt. Still delicious.

i, personally, bake french fries. what you do is you clean off the potatoes and then cut them into little french-fry looking strips. you can cut as many as you want, and use as many potatoes as you want. then, put 1-2 tbsp. of vegetable oil onto a cookie sheet and spread it out evenly. then put the cut up potato strips onto the cookie sheet and try to make sure that they're evenly coated with the vegetable oil. set the oven to ...oh, probably 450, and bake for 30-40 minutes probably, or until they look like delicious french fries. enjoy!
i loveeeeee them, but don't put too much vegetable oil on them because then they get kinda gross..but they are a lot healthier than deep-fried french fries!

Slice fresh potatoes and leave the skins on. Toss in olive or canola oil and season lightly with salt and pepper. If you want to eliminate the salt, try chili powder. Spread in a single layer on a cookie sheet and bake at about 450 degrees. Keep an eye on them so they don't burn. Once they are softened and the bottoms are brown, flip them over and return to the oven. Bake until they are brown and crisp.
For an even healthier choice, use sweet potatoes. I like to season with a bit of cinnamon and pepper.

Yep an oxymoron =P
Well firstly the thicker you cut the potato slices the healthy, as the thicker ones tend to absorb less oil. Why don't you rather make Wedge fries. Oh and with the potato skin adds more fiber goodness.
Use no salt in the frying part. Only salt them afterwards as the salty taste would be "fresher" and you'll add less = healthier.

I slice potatoes in the shape of french fries and then I dip them in a mixture of... egg, milk and Season All salt seasoning. Then I put them in the oven to bake. My kids love them more than McDonald's french fries. Good luck!

my brother in law makes an awesome french fry that isn't deep fried, all he does is clean his potatoes cut them the size he wants with the skin on, then he puts them in ice water and refriges them for about an hour. then you drain them and dry them. pat your fries dry arranging them on a cookie sheet, take some low fat cooking spray and lightly spray them, season them to taste a good taste with no salt is your garlic or onion powder. Bake in an oven at 375 until golden brown. Enjoy
