Creamed Rice with Spiced Apples
1 cup arborio rice
½ cup caster sugar
3 cups CARNATION Light & Creamy Evaporated Milk
4 red apples, cored and cut into wedges
1 cinnamon stick
pinch saffron threads (optional)
¼ cup brown sugar
1 cup apple juice
Place rice and 2 cups water in a saucepan, bring to the boil, without stirring, and cook over medium heat for 5 minutes or until most of water is absorbed. Add caster sugar and milk and bring to the boil. Reduce heat to low and simmer for 20 minutes, stirring occasionally to prevent sticking, until rice is soft. Meanwhile, place remaining ingredients in a saucepan and stir over low heat until brown sugar dissolves. Bring to the boil, reduce heat to low and simmer, covered, for 5-10 minutes or until apples are just soft. Remove cinnamon stick. Serve rice topped with apples and cooking liquid.
Serves 4-6
Regular Creamed Rice just don't add the apples.

CREAMED RICE
Place 1 cup medium grain rice in a sauce pan along with:
2 cups water
1/2 teaspoon salt
1 tbsp butter
Bring to a boil, cover tightly and turn heat to low. Simmer over low heat until all of the water is absorbed. Remove from heat.
Add:
2 1/2 cups half and half or light cream
¾ cup sugar
2 tea. vanilla
1/8 tea, freshly grated nutmeg
Return to heat and bring to a full boil. Remove from heat and cover. Let sit for 20-30 minutes (covered). Serve.
May also be served cold.

CREAMED RICE
1/2 c. raw rice
1/2 tsp. salt
1 tsp. sugar
1 c. heavy whipping cream
Cook about 1/2 cup of rice, 1/2 teaspoon salt and 1 teaspoon sugar, stirring frequently. Let cool (this is the secret -- the rice must be cool before proceeding). Whip 1 cup heavy whipping cream, adding a little sugar and vanilla (if desired). Stir whipped cream into the rice and refrigerate.

Use one part water, two parts milk, half a part of sugar.
Cook it like you would a pot of regular rice.
When it's done, throw in some cream, vanilla, and cinnamon.
I like a LOT of cream, but whatever works for ya.
