Wear long sleeves, and an apron if necessary. Also, don't lean over the pan. Using a longer utensil helps too. Instead of a fork, use a spatula or something.

Before you put food into the hot oil, make sure the food is as dry as you can get it. Any water on the surface will vaporize very quickly, and cause splattering.

Drop the food into the oil from front-to-back, so that any splashing/splattering will be directed away from you. And when you're turning/flipping food, ALWAYS use a pair of tongs (nothing else).

Three ways:

1. Drain the excess moisture.
2. Use splatter mesh.
3. Very hot oil is effective than slow frying the food in low heat oil. It helps hasten the evaporation and cooking time decreases.

Get a pair of tongs (nice long ones, if you can find them) and stand as far back as you possibly can while turning it over. Also, be sure to flip gently. If you're hurrying and you just flip something over quickly and it drops into the pan, that'll cause the oil/grease to splatter.

Use tongs and keep a screen or lid between you and the hot oil.Try not to have too much water on the food going into the pan. And whatever you do, don't drop the food into the oil from high up, try to lower it slowly.

Use a potholder on the hand that's doing the flipping and a lid between you and the frying pan.

they make little circular metal screens to put over the pan while frying that stop droplets from flying out. However when you flip all you can really do is be careful and flip away from you.
