I heard on TV that back in slave days that they made fried chicken because it can last a long time out of the refrigerator and is considered a 'comfort' food. Not sure that directly relates to the way you asked the question...but may help.

Hello, contruary to popular belief, blacks aren't and weren't the first race to eat fried chicken. It goes back since the begining of civilization. They came by ships from European countries, Vikings, Pilgrims, Spanish you name it they came and bringing with them animals and etc. Having traveled to different countries I have had the oppurtunity to witness who are the greatest chicken eaters fried or stewed, baked or barbecued, smoked or eaten raw. We eat it because its cheap, healthy and excessible late night.

MMMMM..... Fried chicken. Throw in some collards with a big slab of hog jowl cooked in it, cheese grits, hot fish and some fried innards and you have a meal without comparison. Let the rich have their filet mignon, lobster tail and caviar.

I've heard that way back in the slave days that was also what the "masters of the house" ate. And slaves got leftovers. Also, soul food evolved from that keeping traditions from that horrible time period. Collard greens, grits, it was all from the predominant food found in the south at the time and keeping traditions alive from the old country. You used what was available.

I personally love the cuisine and am trying to learn more about it. It's just sad about the history behind it.
