WHITE CHILI
1-2 lbs boneless Skinless Chicken breast
2 can Great White Northern beans
1 can rotel tomatoes
1 TB oil
3 cloves garlic minced
2 tsp ground cumin
1 tsp oregano
3/4 tsp cayenne pepper
1/2 tsp salt
14 1/2 can chicken broth
3 cups monterey Jack Cheese
1 med carton sour cream
Cook Chicken and shread. In a small skillet, cook onion and spices in oil until transparent. Combine beans, broth, rotel tomatoes, onion, and chicken in a soup pan or crock pot. Cook on medium-low heat for about 1 hour. Add cheese and Sour Cream.
This isn't a "traditional" chili recipe, but it still is chili. A little spicy, very filling, thick. Yum Yum.

2 tbsp veg. Oil
2 c. diced onion
3 cloves minced garlic
2 lbs. Lean grd. Beef
1/4 tsp ground cinnamon
2 tbsp chili powder
1/4 tsp ground cloves
1 tsp cumin seed
1/2 tsp powdered mustard
1/2 tsp ground nutmeg
1/2 tsp paprika
2 tsps salt
2 - 6oz. Tomato paste
1) Heat veg. Oil in large pot; add onions and garlic
2) Add grd. Beef, breaking up all the lumps with a wooden spoon. Sprinkle in spices.
3) Stir until grd beef is fully cooked and spices are distributed throughout.
4) Pour in tomato paste. Stir the mixture and bring to a simmer.
5) Mis in about 1 cup of water ( add more or less depending on how thick you want the chili.) Cover, simmer 4 hrs.
6) Season to taste, adding more salt or chili powder if necessary.
7) For best results, refrigerate chili overnight. Heat; seve alone or, as Cincinnatians do, over noodles topped with shredded Cheddar chesse. Garnish as desired.

Try this one:
Ingredients
2 Tbsp pure grade olive oil
1 large onion minced
1 lb ground beef, chop until almost minced.
1 can Kidney beans, save 1/4 of the water.
6 cups Marinara tomato source
1 tsp cayenne pepper
1 tsp red pepper flakes
1 tsp cumin powder
1/2 cup chili powder
1 tsp paprika
Preparation
In a 4 quart pan heat olive oil to smoke stage
ADD minced onions and stir until glazed
Add chopped beef and stir until browned
Add Marinara sauce and stir well
Add all other ingredients and bring to a slow boil,
Simmer 20 minutes, covered
Serve in soup dishes with crumbled soda crackers.
Serves four to six
Increase or reduce cayenne powder according to taste.

no recipe, just techniques....soak beans in hot water overnight. Boil with bacon or smoked turky leg for extra flavor...add chili mixtures or pods after beans are half-way done. add any veggies like onions or potatoes toward end,(potatos are very filling) like last 15 minutes - garlic is great at beginning. Add a little baking soda to prevent heartburn. Dry chili pods work well too if you soak them with beans over night...try not to have any seeds included....chili powder is faster, of course, but flavor not as rich. Try to have brown rice as a side dish (or included in chili, also very filling but will require you to add extra salt) or decoration for presentation. try to include green red and yellow foods on presentation plate (i.e. lettuce, red chili slice, bell pepper slice, etc.). This will make food look more apetizing.

this is a kinda an odd chili recipe, When i moved back in with my parents after a bad marriage, My mother cooked this for me, I thought it was weird, until i tried it, and i loved it, Its called Chili Spaghetti, you will need soup dishes to serve this, Make 1 pound of spaghetti, as you would, Then , Get hormel chili or make your own chili, heat up in a pan, Add 1 can of mushrooms, 2 teaspoons of hot sauce, Ground meat, Green pepper and onion, As the chili is heating, Put cooked spaghetti on bottom of soup dish, a fist full, Put the chili on the spagehetti, Put Shredded cheese on top, And melt the cheese in microwave for 1 sec, and serve, with crackers, or extra cheese, Or you can put spaghetti on side of dish if the people want more

I don't use the ones in books , made up my own .
I'll give you the things I use You can decide how much of each depending on how thick you want it .
in a large Dutch oven or stock pot ,
cook hamburger ,lots of onion flakes , or chop the onions & cook them with the hamberger . I also chop celery & also cook with the hamberger drain fat through colander into a bowl , put fat in trash when cool , not in sink , that will look good to your teacher .
Add ,
chunkie vegetable speggetti sause ,
cans of diced italian tomatos ,
red kideny beans drained
1 packet of chili mix
You can add a little sugar to taiste if you want , not to much .
I don't add tomato juice , I like it thick . It will get thiner as it cooks
Cook slow so it won't burn ,
It's Your cook off , have fun . You might thy this one on your family .
My family love's it , even My son inlaw , he's very pickie .
I started to do it this way because I ran out of the tomato juice & choped tomatos . I only had speghetti sause & italian diced tomatos . Every one loved the change so much they begged me to keep doing it that way
