just want to hear from those in the industry as to what makes a mojito a "perfect" (and therefore authentic?) mojito?

methinks it shall be my drink of this summer and i want to be all prepared!!! (my thoughts are straying to the warm days of summer already!)

Mojito recipe

Scale ingredients to servings
3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.

Serve in:Parfait Glass

I just discovered this drink for myself last night at a chain restaurant and I liked it, but my boyfriend ordered 4 more for himself. I told him I would find out how to make them and this is what I discovered.

You need about 12 mint leaves per drink, throw them in the bottom of the glass. Next you will need a half of a lime cut into wedges, put them on top of the mint leaves and muddle them together gently. Next you need to fill the glass to the top with ice. Then you will need 2 tablespoons of simple syrup or regular sugar ( the simple syrup mixes better). Pour in 1 and a half ounces of Bacardi Superior Rum, top with club soda, and drink up. You can use any flavor of the Bacardi Rums, such as lemon or raspberry, the choice is yours. Enjoy.
