You didn't say whether you wanted candy or a caramel sauce. If making the candy, it is best to use a candy thermometer.

Caramel Sauce

3/4 cup packed brown sugar
1/4 cup water
1 teaspoon lemon juice
1/3 cup whipping cream
1 tablespoon butter
1/2 teaspoon vanilla

In a heavy small saucepan combine brown sugar, water, and lemon juice. Bring to a boil over medium heat; reduce heat. Simmer about 10 minutes, stirring occasionally, until slightly thickened and bubbly.

Carefully stir in whipping cream and butter. Cook and stir until butter is melted. Remove from heat; stir in vanilla. Cool sauce completely.

Cover and refrigerate up to 3 days or freeze in plastic freezer container up to 3 months.

Caramel Candy

3 cups brown sugar
2 cups light corn syrup
1 cup butter
3/4 cup sweetened condensed milk
1/2 teaspoon vanilla

Combine sugar, corn syrup, butter and condensed milk in heavy pan. Cook over medium heat, stirring constantly until sugar is dissolved and mixture boils. Continue cooking to 248 degrees stirring now and then to prevent scorching.

Remove from heat and add vanilla. Pour into 9 x 13 buttered pan. When firm cut and wrap in waxed paper squares. Store in refrigerator.

You can add pecans or walnuts when you add the vanilla.

buy yourself a can of condensed milk, boil it for a hour if a small can, 2 hours for a large can, open it and walla!! caramel sauce

!!!!warning!!!! don't forget about it, the can will explode when the pot runs out of water and boy do you have a mess then.
