I need to bring a somewhat healthy snack to impress at my workout center, tomorrow is our pot luck. Any recipes or Ideas would be very helpful! Thank You!

Here's a cute snack - take whole wheat bread, cut off the crusts and pound it down really thin. Spread a thin layer of creamy peanut butter over the slice of bread. On one edge of the bread put fruit (strawberries, kiwis, bananas - diced up really small). Then roll the bread up and the pb will make it stick. Cut the roll into slices and it looks like little sushi rolls! It's adorable, yummy and healthy, I'm sure it would be a hit!!
You can also do variations on the PB and fruit, like cream cheese/tomato/smoked salmon is another good one.

fish salad, smoked marlin, or any other fish is easier, no cooking o be done, tomatoes, lettuce, nothing really complicated, crab-sticks perhaps, make sure all of this is fresh... fresh ground pepper and fresh lemon...... hmmmmmmmm...
