I will not have people every 10 days to share the starter with. So, would like to maintain a much smaller amount so I could bake a loaf and continue one starter.

Rather than reduce the starter, freeze it. Freeze the starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using.
