Cucumber Raita (This is a side dish for curries. This idea is that the coolness of the yoghurt and the cucumber will counteract the hotness of the curry and so it does - much more effectively than cold drinks).
2 oz (50 g) peeled cucumber
5 oz (150 g) natural yoghurt
1 spring onion, finely chopped
½ clove garlic, crushed
salt and freshly milled black pepper
To serve:
2 pinches of cayenne pepper
1 pinch of cumin seeds
First slice the cucumber thinly, then cut the slices in half, put into a basin and sprinkle with salt. Leave it for an hour, by which time a lot of the liquid will have been drawn out of it, so drain off the liquid and dry the cucumber in some kitchen paper. Now combine the cucumber, yoghurt, spring onion and garlic, mixing them thoroughly. Season with salt and freshly milled pepper. Pour the mixture into a serving bowl, sprinkle with cayenne and cumin, cover and chill thoroughly before serving.
or Marinated cucumber ribbons on crusty bread
½ cucumber, cut into thin ribbons with a peeler
1 tbsp white wine vinegar
1 tbsp olive oil
1 tsp balsamic vinegar
2 slices crusty white bread, drizzled with olive oil and griddled
Method
1. Put the cucumber ribbons, white wine vinegar, olive oil and balsamic vinegar into a small bowl, stir well and leave to marinate for 10 minutes.
2. To serve, spoon the marinated cucumbers onto the griddled bread and serve immediately.
or Cucumber soup
½ cucumber
150g/5½oz Greek yoghurt
1 tbsp chopped fresh mint
small handful crushed ice
salt and freshly ground black pepper
mint leaf, to garnish
Method
1. Place the cucumber, yoghurt, mint and ice into a food processor and blend together. Season, to taste, with salt and freshly ground black pepper.
2. To serve, pour into a bowl and garnish with a mint leaf
or Tzatsiki
½ cucumber
1 clove garlic, mashed
salt
bunch mint, chopped
½ lemon
1 tbsp olive oil
250ml/9fl oz Greek yoghurt
Method
1. Chop the cucumber into small cubes, place in a sieve and allow to drain.
2. In a large bowl mix the garlic, a good pinch of salt and one third of the mint. Add a squeeze of lemon and the olive oil, mix well.
3. Add the yoghurt, followed by the drained cucumber. Mix well and store in the fridge until needed.
or Pickled cucumber
1 whole cucumber, peeled
1 tsp salt
60ml/2fl oz white vinegar
50g/2oz sugar
7.5cm/3in fresh root ginger
4 stem ginger in sugar syrup
Method
1. Use a fork to run through the surface of the cucumber, vertically downwards, to obtain a fluted pattern when sliced.
2. Cut cucumber into thin slices and put into a large bowl, sprinkle with salt and mix well. Leave the cucumber for 10 minutes to absorb the salt then rinse with cold water. Drain off excess liquid in a colander. Return cucumber to the large bowl.
3. Grate the fresh root ginger. Cut the stem ginger into thin slices.
4. Combine sugar, vinegar and the two types of ginger together. Add to cucumber slices and mix well.
5. Decant into a plastic container. Refrigerate overnight or for a few hours before serving

BAKED SALMON WITH CREAM & CUCUMBER
1 (5 lb.) salmon
3 heaping tbsp. butter
1 med. cucumber
Salt & pepper
1/2 pt. (1 c.) cream
Juice of 1 lemon
2 sprigs of parsley
Put the parsley in the cleaned gullet of the fish and rub butter over the outside. Put in a baking dish, season well and pour the cream around. Cover with foil and bake in a moderate oven (350 degrees electric; gas regulo 4) for 10 minutes to the pound. Remove from the oven and add the peeled and cubed cucumber and lemon juice. Baste well and put back in oven, uncovered, for 15 more minutes. Skin the fish before serving and pour over the sauce. The cucumber should still be a little crisp to act as a foil for the buttery salmon. It is excellent hot, but can also be served cold. Small cuts can be cooked in the same way, but should be left whole: a tail end is good for this method.

Raita sauce - good on meat - I think speacially lamb, but I have tried it with beef too...best as a DIP... mmm...
1 (16-ounce) carton plain fat-free yogurt
1 cup chopped seeded peeled cucumber
1 cup chopped seeded tomato
1/2 cup minced red onion
1/4 cup chopped fresh mint
1 teaspoon ground cumin
1/2 teaspoon salt
Spoon yogurt onto several layers of paper towels; spread to 1/2-inch thickness. Cover with additional paper towels; let stand 10 minutes. Scrape into a bowl using a spatula; stir in remaining ingredients. Cover and chill 2 hours; stir before serving.

Theres that tzatziki sauce or whatever its called and some other sauce that you get with indian meals that cools your mouth after eating something spicy but cant really think of anything else. Look on google : Recipe cucumber
But if u didnt mean in a recipe then there are at least 3 holes in a woman and 2 holes in a man it could go in.

Tzaziki Sauce
Ingredients
2 cups plain yogurt
1/3 cup cucumber, peeled and grated
2 cloves garlic - minced
1 tsp salt
1 tbsp lemon juice
Method
Combine the above ingredients in a small bowl and stir well.
Keep covered and refrigerated until ready to serve
Enjoy this sauce with Souvlaki, pita wraps or as a dip with vegetables.

INGREDIENTS
1 lemon, juiced
1/4 cup olive oil
1/4 cup soy sauce
1 teaspoon dried oregano
3 cloves garlic, crushed
4 pounds pork tenderloin, cut into 1 inch cubes
2 medium yellow onions, cut into 1 inch pieces
2 green bell peppers, cut into 1 inch pieces
skewers
DIRECTIONS
In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.
Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

Simple Cucumber Salad
Thinly sliced cucumber (peeled or not, your choice)
Very thinly slice sweet or red onion in rings
Mayonnaise, fresh or dried dill, salt & pepper
OR dill falvour veggie dip.
That's it, that's all, just put it in a bowl and mix it up. I love to make this in summertime with fresh cukes from my garden, but it's nice and light anytime really. And all quantities are to taste, start with enough cucumbers for the number of people, then add onions in the proportion you like and as much dressing as you like.

It is great as one of the ingredients of Greek Salad.
Cut up equal large pieces of:
Cucumber
Tomato
Feta Cheese
Add some thinly slices red onion and some olives
Add a drizzle of olive oil.
Eat straight way and enjoy!!
(Best in my experience eaten at room temperature not straight out of the fridge... more flavor that way)
