Let him chew the juice out of it... That's fine...
There is no one correct way to eat snacks... Don't make it an issue... Just continue offering them healthy snacks and meals.
Allow them to eat when they're hungry. Not sure who decided three huge meals a day were best, but any gastroentologist will let you know that small meals and grazing during the day is actually better for you.
Don't make an issue out of something so small.... Take what he has sucked dry and throw it into your compost pile.... When it's turned to dirt, plant flowers.. :o)
Really.... it's not a big issue...

The most natural and healthy diet for humans is an omnivorous diet, and not a plant based diet, or a meat-based diet per se. The Paleo Diet can be very widely varied and omnivorous for the most part, but the most important thing is that it’s unprocessed, and avoids the worst foods that agriculture brought mankind… refined inflammatory vegetable oils, refined grains (some are worse than others), and sugar! As you can see, the benefits of adopting a Paleo way of eating can be incredible! I’ve been eating 95% Paleo for the last 5-6 years and I’ve never felt better. I have dozens of friends that have adopted a more Paleo way of eating too, and have seen all sorts of health problems disappear, including eliminating acne and other skin problems, digestion problems, improving brain clarity, and of course, losing a lot of body fat!

When I couldn't get my two-year-old to eat anything other than fruit snacks for snack time - I finally tried pretzels. They do have salt on them, but their not going to eat a whole bag so it's not a huge deal. But they are filling enough and taste good. Worked for me. Maybe it will for you.
And I agree with the person above me - don't make it a big deal - at two they are really trying their independence and food is definitely one arena they try to take control of. So, just be patient and don't make snack-time or any other eating time stressful.

grapes (cut in half), string cheese, mellon (watermellon, honeydew), pears, strawberries, blueberries, Any kind of berrie (let you kids pic a fruit out to try) applesauce (make your own using fresh apples and don't add any extra sugar), yogurt, Smoothies (I make chocolate bananna ones or berry/bananna vanilla) toast, bread and butter, steamed veggies with ranch dressing, muffins (again make your own. sometimes I make Apple bananna chocolate chip muffins. It has 2 fruit servings and a tiny amount of chocolate (which all kids love)) Make your own frozen yogurt, or even your own popsicles. make mini pizzas (put diffrent toppings out and let each kid make their own @ 18 months they can "help" in the kitchen).
This is almost like the recipie I use to make my apple bananna chocolate chip muffins. But It is not the exact one I can not find the one I use online and my recipie is at the daycare i work at.
In this recipie just omit the nuts and add chocolate chips in it's place (I never add the amount the recipie calls for I add less)

for my smoothies I Use the carnation instant breakfast add that to 1 cup of milk in the blender add the other ingredients and a little ice and blend till smooth. Try experimenting with diffrent flavors. Sometimes I add yogurt and fresh fruit with some ice and a splash of juice. In the summer time it seems my kids live on smoothies.
When My youngest was 18 months she loved smoothies. She would always ask me for a moovies. It took forever to figure out that she wanted a smoothie.

Brown bread in finger slices with low fat jam or cheese spread.
Grapes and little cubes of cheese.
Cherry tomatoes.
Raisins
Carefully cooked low fat cocktail sausages
melon slices or chunks, because this kind of melts in the mouth when hes trying to suck the juice out
Wouldnt bother with the chew bars in shops because they are full of hidden sugar and fats.
Wholegrain cereal such as shreddies or weetabix are good as you can add fruit to these; such as strawberries and bananas.
Here your son will be getting calcium, wholegrain and vitamins from the fruit.

The juice has the goodness in it so dont worry hes getting his vitC.Sounds to me their getting what they need and good for them too.My son used to lve small peices of cubed up boprown bread with marmite just a scraping as its a strong flavour, but very good for you.(vegimite).Or blend a soft boiled egg with asmall amount of cheese n a slice of cucumber a slice of tomatoe 1 spring onion head and spread that on instead.Enough for 2 healthy appertites .theyll enjoy picking the savoury chunks up and popping a whole cube into their mouth instead of biting for a change.
