This sounds familiar. I'm a food service sergeant major. First thing I do is get all my paperwork straight, have the commander sign it, then go to the Troop Issue Subsistence Activity. These are the people that provide me the food for the 1,000. The food cycle will depend on the mission. Usually it's MMA (two Meals Ready to Eat(MRE) and a meal made of regular food) for the first three days. Sometimes it's straight M's. As the mission progresses it will change to AMA. I'll then get my vehichles and pick up the rations at the TISA.
The Army is not authorized to use outside sources like SYSCO, etc... for field chow. These sources are called prime vendor and are used in Garrison feeding.

1. Saratoga Trading Company
2. Long Life Food Depot
3. Ration Z (Military Foods)

Any of these three sources could handle an immediate requirement of 1000 Meals Ready to Eat (MRS's) and could sustain production for the near-term until a long-term supplier could be contracted.

For an enduring need--greater than 30 days--I would look for a company that could provide hot meals and perishables (Fresh fruit, vegetables, dairy).

Most chowhalls or reserve cooks have recipys that serve at serve at least 100 troops or more, these are th eonly people I know that can serve a lot of people. I was once a cook in a reserve unit.
