I know its it to represent the cross that they believe jesus died on but my question is why do they do this is there a hidden meaning or belief behind this

There is no hidden meaning or belief behing this, other than an acnkowledgment of the Holy Trinity (Father, Son, Holy Spirit). Making the sign of the Cross has been traced back all the way to the second century.

By the way, it's not just us Catholics. Orthodox Christians, Anglicans, and other denominations also make the sign of the Cross.
