They've always just seemed like unfinished pies to me..

While they have may similarities, the following is the definition of each. Hope it helps.

quiche [ KEESH ]
This dish originated in northeastern France in the region of Alsace-Lorraine. It consists of a pastry shell filled with a savory custard made of eggs, cream, seasonings and various other ingredients such as onions, mushrooms, ham, shellfish or herbs. The most notable of these savory pies is the quiche Lorraine, which has crisp bacon bits (and sometimes GRUYÈRE cheese) added to the custard filling. Quiches can be served as a lunch or dinner entrée, or as a first course or HORS D'OEUVRE.

flan[ FLAHN ]
1. A round pastry tart that can have a sweet filling (such as CUSTARD or fruit) or savory filling (vegetable, meat or savory CUSTARD). The pastry is usually formed and baked in a special flan ring, a bottomless metal ring with straight (about 11/2-inch-high) sides. The flan ring is set on a baking sheet before the dough is baked. 2. A famous Spanish baked CUSTARD coated with caramel.

tart
n. Very simply, a tart is a pastry crust with shallow sides, a filling and no top crust. The filling can be sweet (such as fruit or sweet custard) or savory (like meat, cheese or savory custard). Depending on the type of tart, the pastry shell can be baked and then filled, or filled and then baked. Tarts can be bite-sized (often served as HORS D'OEUVRE), individual-sized (sometimes called tartlets) or full-sized. They can be used as appetizers, entrées or desserts.

A sweet or savory dish made with a crust and filling (such as fruit, pudding, meat or vegetable). Pies can have bottom crusts only, or top and bottom crusts or, as with DEEP-DISH pies, only a top crust. Sweet pies are generally served as dessert and savory pies as the main course or appetizer. Crusts can be made of a variety of mixtures including short crust pastry, PUFF PASTRY, cookie crumbs, MERINGUE and even, as with SHEPHERD'S PIE, mashed potatoes. See also TART.

A quiche is a baked dish that is made primarily of eggs and milk or cream in a pastry crust. Flan may refer to any of the following: In British English usage, flan may be various kinds of tart or cake with a sweet or savoury filling, often custard-based, and traditionally served on New Year's Eve. An egg-based savoury dish closely related to quiche.

A tart is a pastry dish, usually sweet, similar to a pie, but different in that the top is open and not covered with pastry. The tarte Tatin is a particular kind of "upside-down" tart, of apples, other fruit, or onions.

Well, if you are thinking of pie as being two-crusted, I see what you mean by unfinished .....
...however the French do things differently ..... a quiche and a tart are alike in that they are ingredients poured into a crust and baked..... a quiche, in fact, is a tart .... however, "tart" also can be sweet .......

a flan, on the other hand is ingredients baked without a crust


the lines of distinction become a little blurred due to geography and time ..... not to worry

flan doesn't have a crust, it's like custard, for dessert. quiche is served as an entree and is made with eggs and cheese and frequently other ingredients like spinach or bacon, over a crust that's similar to pie crust. a tart has a thin crust and usually has fruit or sometimes something different like onion.

As you can see, the benefits of adopting a Paleo way of eating can be incredible! I’ve been eating 95% Paleo for the last 5-6 years and I’ve never felt better. I have dozens of friends that have adopted a more Paleo way of eating too, and have seen all sorts of health problems disappear, including eliminating acne and other skin problems, digestion problems, improving brain clarity, and of course, losing a lot of body fat!

A quiche normally has egg to bind the ingredients together. A tart is made of something that is tart or sour like cooking apples. A flan usually made of jelly laced with fruit.

If perhaps it's a fruit they have seeds, otherwise it's a vegetable. And vegetables are usually grown in the ground while fruits are grown in trees.
