2 boneless chicken breasts, cut into strips
1 onion, chopped
1/4 cup mushrooms, chopped
1 green pepper, cut in stips
8 slices Provolone
lettuce leaves
tomato slices
4 hoagie rolls, toasted
mayonnaise
In a frying pan or on a griddle, cook the chicken, onions, mushrooms and peppers together in a small amount of olive oil. When chicken is done, divide the mixture and shape into about the size of the hoagie. Place two pieces of cheese over each chicken and veggie mixture. Let cheese melt.
Toast the hoagies and spread mayonnaise and add slices of tomato and lettuce on each. Add the chicken, onion and cheese to each roll.

INGREDIENTS

DIRECTIONS
Tear the ham, salami and American cheese into small pieces. Place in a large bowl.
In a medium bowl, blend the mayonnaise and oregano. Mix the mayonnaise mixture into the ham mixture 1/2 cup at a time, until meats and cheese are well coated. Mix in the onion.
Before serving, mix in the lettuce and tomatoes. Serve with the hoagie roll pieces for dipping.

Around here they use shaved chicken breast. If that is not available you can slice it very thin and then into strips.
Cook onion slices, (and mushroom slices and bell pepper strips if you like them) in a little oil. Add chicken and cook through. Push it all into a pile and put slices of cheese on top (provolone or american cheese) Let the steam melt the cheese. Place on sliced hoagie roll. Add condiments to your liking. I have seen people add extra cheese slice and let the heat of the meat melt the cheese. Also sprinkling of chopped hot or sweet banana peppers. Some people use ketchup.
