I made a plain cheesecake last night and after leaving in the fridge the whole night am ready to do the topping. I got some strawberries but was wondering wether to mix it all and swirl it on my cake or cut slices instead? Also if i cut to slices will the fruit keep a nice color if stored for more than 3 days in the fridge or will they turn brown on top of my cake?

I think I would do both. Make a sauce of some of the strawberries and drizzle it over the top. The add a few sliced or whole berries on top of that. Strawberries will keep their color.

I love making strawberry cheescake! I recommend you take the real strawberries and mix it in a bowl with preserved strawberry jam. The jam will color the cheesecake faster and nicer. When finished mixing jam and berries, place the strawberries on the cake and then spoon the liquid jam (left from the strawberries) over the strawberries. You can also mix the jam with strawberries, berries (blueberries and raspberries) to give it a funkier look. Leaving the cake for more than 3 days will not turn it brown unless it is UNCOVERED!
