I love all types of cheese, but my favourite is Cypriot halloumi /hellim. It is just wonderful, especially if it is made from sheep and goat's milk in the right proportion. You can eat it just like that or grill or fry it. We love it fried with eggs for breakfast, grill it as the last serve when we have bbq, and not cooked, it just goes wo well with watermelons on a hot summer evening.

By the spoonful, cold, Amish Bleu Crumbles.
On a cracker, Extra Sharp Cheddar by Kraft (not aged).
With beer and buddies, Limburger spread on anything.
On a sandwich, Provolone.
In a salad, feta or goat cheese.
In a sauce............

King Island (in Tasmania, Australia) double brie. It's so delicious and creamy. I also love vintage cheddar with some water crackers.
