The best way is to get a teacher who knows little Chinese. In that way your teacher will be speaking always in English to communicate to the students. But be sure that your teacher knows Chinese grammar so she could tell the difference between the English grammar and Chinese grammar. In fairness to your teacher, maybe the course content of your class is really grammar. So she is not oblige to do conversation. But if every English class is integrated meaning that you have to touch the four macro skills in every subject, so you can demand that she prepares a lesson plan that develops the four macro skills of listening, writing, speaking and reading. Try to check the curriculum of your school and look into the description of the subject matter. You can also take advantage of your grammar lesson because it is the backbone of good conversation. By the way, your English is already good. You can manage. There are only few things to rectify as can be seen in your question. Maybe you also have to thank your teacher.

Your teacher is quite right to explain English grammar in Chinese. It's the only way you'll understand. But if you want to speak more English in class, try speaking it to her. Make an agreement that you will all do that. Keep speaking it in response to her Chinese. Perhaps she will take the hint.

Find an english dictionary. There are many in the internet.
For example the yahoo American Heritage dictionary, they will teach you how to speak the words correctly and show you what it means.
