I want to start eating healthier but I only know a little bit. I need some help with good diet plans, What to stay away from, healthy snack ideas, etc.

those little mini rice cakes are good for breakfast with a cup of coffee or tea
protein in the form of chicken breast is good
any green veg

the only way that I can do it, is to eat three healthy meals a day and loose the snacks altogether, unless I want an apple or a cup of berries in between.

Well, I could go on for awhile, but some quick tips and a great resource to start with:

1. One thing that helps me is to focus on getting 3-4 fruits and 4-5 veggies a day -- fills you up and keeps you away from junk. They make great snacks too -- apples, grapes, carrots, celery -- all very portable and easy to prepare.
2. Make sure that you are eating the correct portions of higher calorie foods, like meat. (A half a medium chicken breast is a serving of protein -- most people regularly overdo it.)
3. Stay away from foods that you know that if you start to eat them, you won't be able to stop (trigger foods -- mine is those buttery fudge elf-shaped cookies -- I can eat the whole tray in one sitting). Instead, buy similar items that can head off a craving without over doing it. (I buy super intense dark chocolate that at about 50 calories a square heads off my chocolate cravings and a square is all I can eat -- great to pair with the sweetness of some fruit too!)
4. Meal replacements (like bars or shakes) make a great balances breakfast on the go -- Luna and Kashi bars are two favorites. Stay away from Balance, Marathon, etc bars. Try to keep the bars that you eat righ around 200 calories and avoid those with ingredients like high fructose corn syrup. (The 100 calorie balance bars make a good snack, but their regular bars aren't calorie-landen, but have not so good ingredients).
5. Keep a food/exercise journal! I was completely skeptic and against the idea, but it does make me think about everything that I put in my mouth and all of my food choices.

I could give more, but I could also go on all day. Best thing that I can tell you is to start researching and incorporating things into your diet, finding out what works for you.

I lost 40 lbs in 3 months.
eating better was made easy for me on the back of a box of special "K", IT WORKS ! it is so simple, that is why, cereal 2x a day (B'fast and lunch), fresh fruit, or veggie snack 2 x a day, THEN, a normal healthy dinner, with "Normal sized" portions, it makes dieting less painful because, at the end of the day, you have a nice meal to look forward too, not lettuce, or some other bland diet food.

Avoid all sugars (Soda, candy, cake, things that say "0-fat" are usually loaded with sugar.
Avoid all "Refined Carb's" (bread, Pasta, etc.)
Fried food is "DEATH"
