This saying is used in the north of scotland for doesn't care or just not bothered and I was just wondering the origins of it - set a task at work to find out so any help appreciated - Tricia

This is a very wild guess, but holistic medicine recommends chewing one's food well and taking ginger as a precaution against indigestion and other stomach ailments. Although ginger is somewhat alien to Scotland, it has found its way into certain types of shortbread. Ginger beer in a Scottish context became famous in the famous law case of Donoghue v. We say "didnae gee her ginger."
I think it comes from the word ginger[which is fizzy juice up here]
If you shake a bottle it fizzes up.
So "geeing your ginger" is like shaking a bottle of juice and getting all agitated
