Eating about 5 times a day. So (an example):

Breakfast at about 7ish: A bowl of Special K cereal with sliced banana and low fat milk. Served with a slice of brown bread, low fat spread and marmalade.

Snack at about 10.30ish: A bunch of grapes/piece of fruit

Lunch at 12.30ish: Low fat cheddar cheese and salad wrap with cranberry sauce, served with a banana, mango and blackcurrents smoothie.

Snack at 2.30ish: Pack of crisps/Bar of chocolate

Dinner at 6ish: Spaghetti Bolognaise with minced beef, mushrooms and onion.

I don't want to go on a diet as such but make real diet changes in the way I eat so that after I've lost the excess weight I can maintain it. And I can't starve myself, no matter what! If I give up something eg chocolate then when I have a little bit after some time I end up eatin it non-stop so it negates the benefits of not eating it for so long.

Any tips to help me? Any healthy snack food suggestions? Will eating so many times a day really help me?

Sounds pretty good! Make sure to eat lots of veggies and fruit and drink lots of water. Just choosing low-fat products is a great idea.

I'm a grazer, I take a lot of flack from my co-workers, all is just in fun, but I eat all day long. Small meal, after snack, after small meal. I haven't changed dress sizes in many, many years. I have always been a slow eater and I think that is as important as everything else and it is why I can't eat a big meal. My brain has time to tell my belly it's time to shut down before I've eaten everything on the table. Changing your eating habits is like anything else, it takes time to adjust. The only advise I offer is no matter what it is you are eating, just slow down while consuming it.

I do have some small suggestions - try nibbling on very dark chocolate. Your craving will be sated faster. Add some protein to your snacks (lowfat cheese, lean turkey or cottage cheese) and maybe a mixed salad at dinner. OH and don't forget your water. Otherwise it sounds very good to me! You are right, eating more meals/day of more or less equal calorific value will boost your metabolism. Good health!

That seems like a very healthy diet.
Tip: It's better to eat more often but in smaller portions.
