This was soooo good. And sooo easy. My husband hates meatloaf and he loved this. If you have kids they'll go nuts too!

Preheat oven to 350 F - spray a 12 cup muffin pan with cooking spray

Mini Meatloaves:

1 lb ground meat, thawed
1 6 oz package chicken flavored stuffing mix
1 cup milk
1.5 tsps garlic powder
1 tsp onion powder
Spaghetti sauce
Mozzarella cheese

Mix everything except the sauce and cheese with your hands in a big bowl until it's completely mixed together. Grab chunks of it like you were making meatballs and split it evenly into each muffin cup. Press the meat in and make an indentation in the top to make a "cup". I like to use the handle end of an ice-cream scoop. Makes a perfect size pocket. only press about halfway in.

Then you take a spoon and put some spaghetti sauce in the "cups" and put it in the oven for 30 minutes. Take it out, sprinkle some mozzarella cheese on top, and place back in the oven for 5 - 10 more minutes.

Additional details:
The ground meat should be beef, but I'm sure you can get creative with the miz - try mixing a half pound of beef and a half pound of iltalian sausage - that would be good to.

Also, the stuffing mix should be dry and right from the package. It will feel weird and very UNsoft to mix, but believe me it's worth it. I used the chicken flavor because of the seasonings in it. It is a great add to the garlic and onion powder. Happy Cooking!

One more---make it less fattening by using very lean meat or ground turkey. Also, you can replace the 1 cup milk with 1 cup water instead.

mmmmm sonds good! i love experimenting! can you use sage n onion stuffing? is it fattening?? ha ha!!

Thank you Stella, it sounds like a really easy and yummy recipe - I'll try it soon. Just a couple of questions 1. Ground Meat - Beef or Pork or a mix? 2. Chicken flav. stuffing - prepared or dry from the pack? Can you add the details please.
