You can start them between 4-6 weeks on the simple stuff.
Mine had No,Stop,Sit, knew their names and were housebroken by the time they were both 12 weeks old. They also walked on leash quite well by this age.
Neither started showing signs of possessiveness or being territorial until they were between 6-8 mos.old.
Once they started barking at strangers coming to our door or getting too close to the car rough play was introduced. But the real protection work did not start with ours until they were 1 and 1/2.

You need to find someone that trains for protection or you will ruin this dog! Start training obedience early, simple commands in the beginning. Your GSD should have his obedience skills down pat way before starting protection training. You can keep up with drives, by doing a lot of playing with jute tugs and tennis balls on a young pup. Find a good Schutzhund club and go take a look, then join. Do not try to train a GSD in protection by yourself.

What's a GSD? And unless you are a professional (like a police officer) skip the protection work, it's unnecessary. Dogs protect their family and home by instinct, protection training usually just makes them fearful and nervous. And dangerous too. Plus if you don't use the training daily (like a cop does) it's pretty pointless to a dog. Obedience training can begin as soon as the dog pays attention, sit can be learned as early as 6 or 8 weeks. If you want something fun to do with your dog, try agillity training. It's great exercise for the both of you.

I've started pups as early as 4 weeks with simple obedience training. I don't expect perfect form or anything at this age. As they get older I gradually step up my expectations.

As far as protection work, find someone experienced in training dogs for this. Doing so yourself with no previous experience doing so, you can end up with a loaded gun with an itchy trigger finger.

About 4 to 6 months is considered pretty much the ideal time to at least get started training. Most trainers say you should train them at least before they are a year old.
