Nothing will happen, besides not charging your Ipod Battery for a minute. However, if you are currently uploading songs/ data onto the ipod when you disconnect it, you may have some problems with the files, and not all of htem will have uploaded. I recmommend deleting any that were uploading when you accidentally restarted, and re-uploading them.
other that that, you have nothing to worry about.

It COULD happen, that the synchonization is not finished and the rebuild of the index database on iPod is not finished.
But I said it COULD. In that case you can connect it again and re-synchronize.
But it never happened to me, so don't worry.
