I have no idea what the girl meant other than he was the guy she dated in the fall, but usually "fall guy" is the guy who "takes the fall" or the blame for something he didn't do, or that he only took a small part in. It is a mob term mostly.

There used to be a TV show by that name staring Lee Majors and it was about stunt men bounty hunters. So a “fall guy” is a stuntman.
