Heat olive oil in a pan. Sautee onions. Add garlic if you like it.
Add sliced mushrooms. After a while, there'll be a lot of fluid coming from the mushrooms. Use some cream to thicken, and bind with some cornstarch.
Works great for pasta, veggies, or meat. :)

Saute 2 or more cups of sliced fresh mushrooms, with one large or two chopped onions when they are brown add: garlic cloves 4 or more, 1 carrot chopped fine, 1 celery rib chopped fine; using olive oil. Salt and pepper well, put on high heat and cover. You want to stir them now and then. You want them to be dark brown. When they are browned add about two cups of chicken or beef bullion - canned or in the package. Simmer, at this point you can add some spices like basil, oregano, parsely, thyme, sage, whatever. You can add cans of crushed tomatoes or tomato sauce (Pomi is the best and comes in a package) and cook for a longish time on low. If you want to have meat in the sauce you can brown the meat after the mushrooms and onions have turned brown.

EASY MUSHROOM SAUCE
Ingredients:
1/4 cup butter
1/2 cup (1 med) finely minced onion
1 lb. mushrooms, thinly sliced
2 TBLsps. lemon juice
1 tsp. salt
dash of pepper
1 cup sour cream
Melt butter in large skillet over medium heat. Add onion; cook 2 minutes. Add mushrooms; sprinkle with lemon juice, salt and pepper. Cook 5 minutes or until mushrooms are tender stirring occasionally. Remove from heat. Stir in sour cream. You can use this for meat or poultry. Very good if you are having noodles with your meat. Mix half the mushroom sauce with noodles and leave the other half for your meat. Use 8 oz. of the fine noodles cooked and drained.

1 ounce dried mushrooms, reconstituted and cut into 1/4 inch slices
1 medium yellow onion, cut into a medium dice
2 cloves garlic, finely minced
2 tablespoons molasses
2 tablespoons red Balsamic Vinegar
2 tablespoons soy sauce
1 tablespoon cornstarch
1 cup water
Combine molasses, soy sauce, and vinegar in a (preferably cast iron) frying pan. Warm and stir until mixed. Add the onions, garlic and mushrooms. Cook until the onions are transparent and tender.
Dissolve the cornstarch in the water. Add the water mixture to the mushrooms. Cook over medium high heat, stirring constantly, until it comes to a boil. Boil for one minute, continuing to stir constantly. Remove from heat and serve.

1/2 medium onion, chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
3 Tbsp flour, toasted
1 to
1 1/2 cup water or veg. stock
1 Tbsp shoyu (soy sauce)
1/2 tsp molasses
3/4 tsp savory
1/2 tst thyme
black pepper && salt to taste
In a non-stick skillet, stir the flour over medium heat until
it begins to smell toasted and turns very light brown. Pour
flour to a small bowl && set asside. Reduce heat to medium
&& steam/saute onions && garlic, using teaspoons of the water
or stock to keep them from sticking, until the onions are soft.
Add mushrooms, cover, and simmer for 5 to 10 minutes. The
mushrooms will release liquid, cook them until it has mostly
evaporated. Sprinkle flour over the mushroom && onion mixture
and mix. Stir water or stock, shoyu, and molasses into the
mushrooms && onions. Simmer over medium-low heat until the
sauce thickens. Season with herbs, pepper, && salt. Serve
immediately.

simplest mushroom sauce I know, chop mushrooms to bite size, chop onions. slowly fry onions till opaque in a small amount of oil, preferably olive oil, add mushrooms and fry for a few minutes, add beef stock or 1 beef stock cube and stir until mixed, add cream to make a thick sauce
good luck- if you are diet conscious, use powdered skim milk and a tiny bit of water instead of cream.

take one spoon with butter and heat up in a casserole,add 1/2 Finley chopped onion and 6 Finley chopped mushroom and just let them cook until ligth brown.add 2 table spoons with sweet soy sauce.add a pint off dobbelcream let it simmer and thicken it with cornflower.works really well with chicken,pork or even venison.
