I've wanted to adopt one since high school but I thought it would be a bad time because I didn't know where I would be going for uni. Now in my second year of uni, I still don't want to jump into any decisions... My main concern is that I usually go home (7 hour plane ride) for the four months of summer. Would it stress out my cat too much to take it with me?

Hey, I understand you're thinking and thank you for not jumping into anything! I would caution you against getting a cat right now. When I was in college with my pets I had a VERY hard time finding rental housing that allowed pets. Many places allow pets but charge pet fees and additional deposits. Also, keep in mind how much money keeping a cat will cost...food, litter, vaccines, flea preventative, emergency vet care, etc.
I am a veterinary technician and I worked at a humane society in a college town for several years. A large number of animals brought to the shelter were from college students who impulsively got a pet, then realized their landlord didn't allow it, or realized too late they really couldn't afford it.
As far as the plane ride, it really depends on the cat. Many pets travel regularly with no problems. If you do get a cat and decide to fly with it, please consider keeping it in the cabin with you, not in baggage. Different airlines have different policies about pets, check ahead before you fly. Also keep in mind you may need a health certificate for the cat, depending what airline and where you are flying to and from.
Again, thanks for not jumping into anything, make sure you're really ready and if you do decide to get a cat, please consider adopting from a shelter!!!!!! Good luck:)

Since your life is still so unstable, maybe you should think that getting a cat right now would be a not so good idea. So much can happen with cats in such a short time (ex when you go back for a visit to your home)

probably not a good idea, its best to wait till your more settled because cats are territorial and moving to new areas can be stressful. if you do decide to get one then make sure its used to travel before going anywhere and put an identification collar on it.
