my dog sleeps with her eyes open and her eyes roll in the back of her head... is this normal?

Yes as creepy as it is, it is normal for dogs to do this either due to the fact that during the breeding process that breed has protruding eyes and therefore the eyelids don't quiet meet up or its just them.
If the eyes become overly dry you can put lacrilube or natural tears in them.

That is totally normal. My dog was sleeping with her eyes open and her eyes were rolling into the back of her eye. Humans do that too. It is called the REM (Rapid Eye Movement) Cycle.

That's how I sleep. Probably the dog drank too much like I do.
